I didn’t mean to write a book on gin and I certainly didn’t mean to write one that I would share with others.   At the end of the day, I would start making a cocktail with my favorite spirit gin. Instead of my regular gin and tonic, I decided to try and up my game with new cocktails.

Bees Knees

Description: Close to many of the other lemon-sweet drinks in this book, the Bees Knees stands out with the use of honey. While the sugar content is similar to simple syrup, the distinctive taste of honey is noticeable in the drink. Pair with a honey-distilled gin such as Barr Hill to double down on its natural flavor. This can also be used as a great base to get creative with the more unusual spices in your cabinet—think cardamom or sage.

Ingredients:
2 ounces gin
¾ ounce lemon juice, freshly squeezed
½ ounce honey syrup
(Very easy to make; 50% water /50% honey, heat in pan until honey dissolves, let cool, and use. Put in airtight container and refrigerate. Will last up to a month.)

Steps:
1. Add the gin, lemon juice, and honey syrup into a shaker with ice.
2. Shake until well-chilled.
3. Strain into a chilled cocktail glass.
4. Garnish: lemon twist.

Blueberry Thyme Gin & Tonic

Ingredients:
2 ounces gin
Small handful of blueberries
Two sprigs of thyme
½ ounce simple syrup
Tonic water

Steps:
1. Add a small handful of blueberries, two sprigs of thyme, and simple syrup to a shaker and muddle.
2. Add gin and stir for 15 seconds to blend flavors.
3. Fill a glass with ice cubes and pour shaker over the ice.
4. Add tonic water.
5. Garnish with another sprig of thyme.

Gimlet

Ingredients:
2½ ounces gin
½ ounce lime juice, freshly squeezed
½ ounce simple syrup
Garnish: lime wheel

Steps:
1. Add the gin, lime juice, and simple syrup to a shaker with ice and shake until well-chilled.
2. Strain into a chilled cocktail glass or a rocks glass filled with fresh ice.
3. Garnish with a lime wheel.
